FOOD SAFETY IN MEAT INDUSTRY
Impact of food on human health is known for centuries. Mostresearches confirm that polluted food causes about 70% of humanand animal’s contamination. Uncontrolled exploitation ofresources, pollution of soil, lack of good quality water in enoughamounts, changed air quality in all layers of atmosphere, massindustrialisation, are just some of global ecological problems withwhich agro food producers must cope with. Overall pollution ofwater, air and soil is significant problem in sector of foodproduction. Food safety becomes one of main aims of modernman.
EU researches from year 1998 point out on the lack of trustin 60% of consumers regarding food quality offered at the market(especially meat), which led to increased trade of safe food in EU(food produced in the system of organic agriculture and processedin adequate way) - during year 2002 trade of organic products wasabout 6 billion pounds, i.e. 2% of total food market, which isapproximately three times higher in compare to year 1995 whentrade of this food was 1,938 pounds (according to: Irish Agricultureand Food Development Authority). Modern trade (internal andinternational) and food consumption is characterised by highconcern of buyers and larger demands regarding food safety(hygienic, toxicological, etc.). Result of this situation is permanentaiming toward creation and promotion of efficient and effectivemanaging systems in entire “food chain” trough various preventiveactivities and documentation support, which should enablemaximal possible safety of food.
